Recipe - Ratatouille Provençale

Ingredients:

- 2 aubergines

- 2 courgettes

- 4-5 tomatoes (on the vine if possible for extra flavour)

- 1 red & 1 green pepper

- 1/2 jar of Nyons black olives

- 1 large onion finely chopped

2 teaspoons of Herbes de Provence

2 tbsp of olive oil 

- 5 garlic cloves

- sea salt & freshly ground pepper 

- Freshly ground nutmeg & 2 bay leaves

 

  1. Finely chop the onion and fry in olive oil until translucent.
  2. Wash the vegetables and partially peel aubergines & courgettes.  Chop in small cubes and add to the onion.
  3. Add the crushed garlic, herbs, seasoning, bay leaves, grated nutmeg, olives.
  4. Cook for 1 hour stirring occasionally.  Can be served hot or cold.
