Courgette Chips with Creme of Herbes de Provence
Here is the way I managed to get my daughter to eat courgettes. Cut them into batons, dip into a beaten egg mixed with a teaspoon of our Creme of herbes de Provence and then coat in seasoned bread crumbs mixed with grated Parmesan. Bake at 200oc for 20mn with a drizzle of olive oil. Courgette Chips done. This evening I also coated some chicken goujons which I pan fried for 15mn. Yum
