Cooking with Legumade Provencale
Another of my super quick, easy and tasty recipes for a real taste of Provence is to add a layer of Legumade Provencale (a vegetarian pate made with aubergine, courgette, pepper, sundried tomato) to a fresh fillet of white fish (also love it on red mullet), drizzle with a drop of chili & herbs infused olive oil and bake for approximately 10min alongside some cherry tomatoes on the vine. Serve with rice. Bon appetit!
