The Petit Epeautre grain, unique to Haute-Provence, is grown organically amongst lavender fields in the high plateau of the Ventoux. It resembles spelt but is very low in Gluten and highly nutritious (contains 8 amino-acids, 4 times more magnesium than rice, calcium, phosphorous and is high in fibre). It has a beautiful nutty flavour which makes it an ideal alternative to rice, spelt or barley. Try it in a risotto, in soups, in salads or as an accompaniment.
